I'm fickle when it comes to breakfasts. Some mornings I feel like something with more sustenance like avocado toast. Other mornings I want something a little sweet like yogurt with fresh fruit. And then there are mornings when I crave something light, like a smoothie, and this recipe is both tasty and fulfilling.
One thing I always buy at the grocery store every week is bananas.
Why? For several reasons:
1. They are dirt cheap.
2. They're a great after work-out snack.
3. They help ripen your other fruit in your fruit bowl.
4. And when those bananas start to spot, peel 'em, wrap 'em and freeze 'em!
Ripe bananas are some of my favorite things in the world. Once you freeze them you can blend them to make a vegan ice cream, slice them and throw them on a graham cracker with some peanut butter, or a great way to add a little sweetness and flavor to smoothies.
Feel free to freeze this smoothie for a tasty frozen treat!
AVOCADO SMOOTHIE
(makes 1 smoothie)
- 1/2 avocado
- spoonful of honey
- 2/3 c soy milk
- 1/2 frozen banana
- 2-3 ice cubes
I usually use a 2 cup measuring cup that came with my immersion blender. It looks like this but you can use a large plastic cup to blend this smoothie in. Combine avocado honey and soy milk and blend with an immersion blender. Then add frozen bananas and ice cubes to thicken the mixture. Serve immediately or keep in the freezer until ready to serve.
*** I learned from my mother that the best way to start every morning is by drinking a glass of room temperature water with a squeeze of lemon. It's a great cleanser for your body and gives you a nice boost of Vitamin C. Give it a try and see if you notice any differences in your skin, digestion and health!
