Summers in Texas are not for the faint-hearted. The sun can be unforgiving and turn sidewalks into hot iron skillets. Even in the shade, it feels like a 100 degrees. The blistering heat can only be defended by sticking your head in the freezer, cold showers, endless icy libations, and my favorite: popsicles.
You can buy popsicle molds online or at most department stores. Here are some of my favorite molds:
You can even make these boozy pops and add some spirits like a strawberry flavored vodka or even some tequila for some Strawberry Margarita Pops!
STRAWBERRY LIMEADE POPSICLES
(makes 10 popsicles)
- ½ cup freshly squeezed lime juice
- ½ cup water
- ½ cup sugar
- 1 ½ cup strawberries, hulled and quartered plus ½ cup hulled and sliced
In a medium pot, add lime juice, water, sugar and strawberries. Bring to a boil and remove from heat. Set aside and cool. Using a hand blender, puree strawberries until thoroughly blended. Pour into popsicle molds leaving about 1/4 “ space to add the sliced strawberries. Add sliced strawberries and freeze for at least 3 hours or overnight. Unmold by running the mold carefully under warm water and serve immediately. Store popsicles in individual plastic sandwich bags in the freezer for up to 6 months.
