KALE WRAPS WITH ELOTES

Now what do you do if you made a crap ton of Elotes and now you have a bunch left over?? Never you fret my pet. Why not use them for some healthy lettuce wraps? Since I had Tuscan (dinosaur) Kale growing in the garden, I made some veggie kale wraps and topped it with some creamy avocado chunks. I even tossed in a habanero to the leftover mixture to give it a nice kick. Feel free to use any type of lettuce in place of kale.

KALE WRAPS WITH ELOTES  

(serves 1-2) 

  • 4 tuscan kale leaves, cleaned
  • left over elotes
  • 1/2 avocado, cubed
  • 2 oz cotija cheese, crumbled
  • pinch of chili flakes
  • 1/2 lime, cut in wedges

Lay clean kale on a plate. Place left over elotes (nuke if you prefer the corn heated) and top with avocado, cotija cheese, a pinch of chili flakes and a spritz of lime. Serve with fresh fruit or baked tortilla chips.
