So now you've made a big batch of roasted carrots and you want to transform the leftovers into something a little different -- why not toss it with some fresh herbs and chopped nuts? It's a great way to add flavor and healthy oils to any dish.
With the holidays right around the corner, this is also a great option to share with friends and family. Feel free to try other combinations like pecans and basil or cashews and thyme, the possibilities are limitless so jog your creativity and have some fun!
ROASTED CARROTS WITH SCALLIONS AND ALMONDS
serves 1-2
- 2 cups leftover Roasted Carrots
- spoonful sesame oil
- 1 scallion, thinly sliced
- handful sliced toasted almonds
In a large bowl, toss in sesame oil, sliced scallions and a handful of sliced toasted almonds. Mix and add in leftover roasted carrots.
If you prefer a little sweetness, add a spoonful of honey. If you want more scallions or almonds, just add to your liking.
