Last week, we taught you guys how to properly roast carrots. If you missed it, check out our video tutorial here and our blog post here. So now you've made a big batch of roasted carrots and you want to transform the leftovers into something a little different -- why not toss it with some fresh herbs and chopped nuts? It's a great way to add flavor and healthy oils to any dish.
With the holidays right around the corner, this is also a great option to share with friends and family. Feel free to try other combinations like pecans and basil or cashews and thyme, the possibilities are limitless so jog your creativity and have some fun!
