THE CUKE

It's important to always set aside a day for rest and meditation. This morning, I woke up and cut vegetables and flowers from our garden and made a lovely floral arrangement using mustard greens, fotinia and onion flower plus a few sprigs of baby breaths for a touch of softness. 

 

And then I felt like doing absolutely nothing. And what better way to enjoy doing nothing than with a good cocktail?

The Cuke from the NY TIMES  is a delightful mixture of lime, fresh mint, cucumber and raw cane sugar muddled with sparkling water and Hendrick’s Gin (I chose to add a handful of Muscato grapes for a little extra sweetness.)

THE CUKE

(makes 1 pitcher) 

  • 6 limes, rinsed
  • 1 cup packed mint leaves, no stems  
  • 2 cucumbers, washed and sliced  
  • 1/2 cup simple sugar syrup (1/4c sugar with 1/4c water) 
  • 2 cups of vodka or gin (I used Hendrick's) 
  • Sparkling water

Thinly slice 3 limes and place in a pitcher. Juice the rest and add juice to pitcher. Add mint leaves. Place cucumber and simple syrup to mixture and muddle ingredients. Add vodka or gin. Place in fridge to steep for 30 minutes or longer.
